Cordyceps Flowers Dan Sheng Soup with BRAND’S® Essence of Chicken with Cordyceps.

Cold and flu symptoms such as coughing, shortness of breath and a stuffy nose can put the respiratory system under immense strain. To build good respiratory health, consider taking immune-boosting herbs such as cordyceps.

Using this recipe, learn how to prepare a nourishing and delicious soup made with cordyceps flowers, dan sheng and BRAND’S® Essence of Chicken with Cordyceps.

Ingredients:

  • 2 bottles of BRAND’S® Essence of Chicken with Cordyceps
  • 900ml to 1000ml of tap, distilled or mineral water
  • 1 skinless chicken thigh
  • 40 to 60 cordyceps flowers (washed and soaked in hot water for 10 minutes)
  • 4 pieces of dan sheng, 2 inches each (thinly sliced)
  • 12 dried mushrooms (washed and soaked in hot water for 10 minutes)
  • 4 seedless red dates
  • 12 to 15 goji berries
  • 2 thin slices of ginger
  • Pepper to taste
  • 1 teaspoon of olive oil (alternatives: canola, sunflower or flaxseed oil)
  • 1 teaspoon of salt

Preparation:

  • Parboil the chicken thigh in water for 1 to 2 minutes. Discard the water and rinse away excess fats from the chicken thigh.
  • Put red dates, dan sheng slices, cordyceps flowers, ginger slices, mushrooms and the parboiled chicken thigh into a stewing pot made of glass, corningware or clay. Add water into the pot and cook over high heat. When the water starts to boil, switch to low heat and stew for 3 hours.
  • Skim the soup surface to remove excess oil. Next, add goji berries and olive oil, and season with salt and pepper. Stir well. Turn off the heat and let the soup steep for 10 minutes.
  • Finally, pour 2 bottles of BRAND’S® Essence of Chicken with Cordyceps into the soup and stir well. Scoop the soup into bowls and serve hot.

Alternative preparation:

  • If using a slow cooker, put all the ingredients into 800 to 900ml of water and cook on Auto or High mode for 4 to 5 hours, or Low mode for 7 to 8 hours. Once cooking time is up, follow steps 3 and 4 above.
